I'm going to make fat bombs again today. I finally ran out of my first batch. These have been such a great treat - they satisfy any cravings I may have for something sweet after a meal. I found individual silicon candy molds at World Market - perfect for these treats (think mini-cupcake wrapper - about 1 1/2 inches across- in silicon, so it's reusable)
Here's the recipe:
8 ounces almond butter (no sugar variety, raw or roasted - whatever you prefer)
8 ounces coconut butter (I bought mine on the internet, but later found it in a health foods store)
1 stick butter
Mix together in a microwave safe bowl. Microwave for a minute or two until the ingredients are soft and can be blended well together.
Stir in whatever you like for crunch (or whatever you are allowed depending on what phase of Atkins you are on). Last time, I added toasted unsweetened coconut chips, toasted pecans and half a chopped up bar of Lindt Excellence 85% dark chocolate. You can add some Spenda for sweetness if you like.

Update: I made these a little differently this time. I put the "crunch" ingredients in the silicon cups. I used 2 dark chocolate chips, a pinch of cocoa nibs, toasted coconut and toasted pecans. I mixed up the butters and added about 1/4 cup of Splenda. I microwaved it until it was liquid, put it in a glass measuring cup and poured it over the crunch ingredients. This worked a lot better and allowed for better portion control. I got 35 "two-bite" treats.
